Ginataang Tulingan Ingredients:
1 big size of tulingan, cleaned and gutted (I don't know the exact weight of the fish)
1 cup of coconut milk
1 cup of water
1 thumb-sized piece ginger, sliced into 5 flat strips
3 cloves of sliced garlic
1 medium red onion, quartered
1 medium tomato, elongated cuts
1 piece of green chili sliced into half
2 stalks Chinese white cabbage cut into 1/3
salt, to taste (or you can add Magic Sarap)
ground black pepper, to taste
How to cook Ginataang Tulingan?
Turn on the stove in a medium fire and put the pan or pot. When the pan or pot is already hot, put oil.
Saute the garlic, next, the onion, flat strips of ginger, and chili. Wait until most of it turns to a golden brown.
Add 1 cup of water and bring it to a boil.
Throw the main ingredient, "the Tulingan", it is a Tagalog word, in Bisaya it's "Mangko".
Add sliced tomatoes. Cover and bring it to a boil.
Note: Better to under-boil the fish than over-boil it. You can’t eat anything about fish that has boiled into mush.
Add the coconut milk.
Exaggerate Explanation:
This is the main seasoning why this dish is so delicious. Because the aroma of Perfect Coconut Milk worn for several minutes is embracing yourself by a soft, sweet, vanilla-coconut with smooth floral undertones. (In Bisaya pa, humot kaayo og Lana.)
Add salt to taste. (I add also magic sarap.)
Add the leafy veggie, the Chinese white cabbage or Petchay. Cook for a minute.
It's done. Ready to serve. (My recipe is good for 2 servings.)
